Ingredients
- 8 slices of rye bread
- 1 pound of sliced corned beef
- 8 slices of Swiss cheese
- 1 cup of sauerkraut, drained
- 1/4 cup of Thousand Island dressing
- 4 tablespoons of butter, softened
Instructions

Preheat a griddle or large skillet over medium heat.

Spread butter on one side of each slice of rye bread.

Place a slice of Swiss cheese on the unbuttered side of 4 slices of rye bread.

Divide the corned beef equally among the 4 slices of bread with cheese.

Top each stack with 1/4 cup of sauerkraut and a drizzle of Thousand Island dressing.

Place the remaining slices of rye bread on top, buttered side facing up.

Place the sandwiches on the preheated griddle or skillet and cook for 2-3 minutes per side, until the bread is toasted and the cheese is melted.

Remove the sandwiches from the griddle or skillet and slice in half diagonally.
