Ingredients

  • 8 slices of rye bread
  • 1 pound of sliced corned beef
  • 8 slices of Swiss cheese
  • 1 cup of sauerkraut, drained
  • 1/4 cup of Thousand Island dressing
  • 4 tablespoons of butter, softened

Instructions

  1. Preheat a griddle or large skillet over medium heat.

  2. Spread butter on one side of each slice of rye bread.

  3. Place a slice of Swiss cheese on the unbuttered side of 4 slices of rye bread.

  4. Divide the corned beef equally among the 4 slices of bread with cheese.

  5. Top each stack with 1/4 cup of sauerkraut and a drizzle of Thousand Island dressing.

  6. Place the remaining slices of rye bread on top, buttered side facing up.

  7. Place the sandwiches on the preheated griddle or skillet and cook for 2-3 minutes per side, until the bread is toasted and the cheese is melted.

  8. Remove the sandwiches from the griddle or skillet and slice in half diagonally.

  9. Serve hot and enjoy!
