Ingredients

  • 8 small chicken cutlets
  • 8 slices prosciutto
  • 8 small slices provolone cheese
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 8 small slider buns
  • Toothpicks, for securing

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Place the chicken cutlets between two pieces of plastic wrap and pound them to an even thickness.

  3. Season the chicken cutlets with salt and pepper.

  4. Wrap each chicken cutlet with a slice of prosciutto.

  5. Heat the olive oil in a large skillet over medium-high heat.

  6. Dredge each chicken cutlet in flour, shaking off any excess.

  7. Cook the wrapped chicken cutlets in the hot skillet until browned on both sides, about 2-3 minutes per side.

  8. Transfer the browned chicken cutlets to a baking sheet and top each one with a slice of provolone cheese.

  9. Place the baking sheet in the oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.

  10. Remove from the oven and let cool slightly.

  11. Slice the slider buns in half and place a mini saltimbocca on each bottom bun.

  12. Secure each sandwich with a toothpick.

  13. Serve immediately and enjoy!
