Ingredients

  • 8 slices of whole wheat bread
  • 1 avocado, sliced
  • 1 cup of spinach leaves
  • 1 cucumber, sliced
  • 1/2 cup of sprouts
  • 4 slices of cheese (optional)
  • 4 tablespoons of hummus
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Instructions

  1. Lay out all the bread slices on a clean surface.

  2. Spread 1 tablespoon of hummus on each slice of bread.

  3. Layer the avocado slices, spinach leaves, cucumber slices, and sprouts evenly on 4 slices of bread.

  4. Sprinkle lemon juice, salt, and pepper over the veggies.

  5. If desired, add a slice of cheese on top of the veggies.

  6. Cover with the remaining 4 slices of bread to make sandwiches.

  7. Cut the sandwiches diagonally into halves or quarters.
