Greek Sandwich with Feta Vinaigrette Recipe

How To Make Greek Sandwich with Feta Vinaigrette

To achieve that Meditteranean flavor for this sandwich recipe, we put together some feta cheese, arugula, kalamata olives, and olive oil between slices of sourdough.

Ingredients

Vinaigrette:

  • 2 tbsp feta cheese, crumbled
  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • ½ tsp sugar
  • ½ tsp dried oregano
  • tsp salt
  • 1 garlic clove, minced

Sandwich:

  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 inch tomato, slices
  • 1 sourdough bread, sliced
  • 1 cucumber, peeled diagonally cut into 1/4-inch slices
  • 3 cups arugula, chopped
  • ½ cup red onion, vertically sliced
  • 2 tbsp kalamata olives, pitted , chopped

Instructions

For the vinaigrette:

  1. To prepare the vinaigrette, combine the ingredients in a medium bowl, stirring with a whisk.

For the sandwich:

  1. To prepare the sandwich, combine 1/4 teaspoon salt and pepper in a medium bowl.
  2. Place 2 tomato slices on each of 4 bread slices, and sprinkle evenly with half of the salt mixture.
  3. Arrange the cucumber slices over the tomato slices; sprinkle evenly with remaining salt mixture.
  4. Add arugula, onion, and chopped olives to the vinaigrette; toss to coat.
  5. Arrange the arugula mixture evenly over the cucumber slices.
  6. Top with the remaining bread slices.
