How To Make Preserved Lemon Chicken Skewers with Summer Tomato Salad

Ingredients

  • 1 lb boneless chicken breasts, cut into bite-sized pieces
  • 2 preserved lemons, flesh discarded and rind finely chopped
  • 2 tbsp olive oil
  • 2 cloves of garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • Wooden skewers, soaked in water for 30 minutes
  • 4 medium-sized tomatoes, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil

Instructions

  1. In a bowl, combine the preserved lemon, olive oil, garlic, cumin, coriander, paprika, salt, and pepper.

  2. Add the chicken pieces to the bowl and toss until all the chicken is coated in the marinade. Let it marinate for at least 10 minutes.

  3. Meanwhile, preheat the grill or grill pan over medium heat.

  4. Thread the marinated chicken onto the soaked wooden skewers.

  5. Grill the chicken skewers for about 6-8 minutes per side, or until cooked through.

  6. While the chicken is cooking, prepare the summer tomato salad by combining the diced tomatoes, red onion, parsley, lemon juice, extra virgin olive oil, salt, and pepper in a separate bowl. Toss well to combine.

  7. Once the chicken is cooked, serve the preserved lemon chicken skewers with the summer tomato salad.
