Grilled Dover Sole in Foil Recipe

How To Make Grilled Dover Sole in Foil

To make this grilled Dover sole, first coat it with lobster base, butter, spices and wrap in foil. Then, grill until it’s nice and flaky.

Preparation: 10 minutes
Cooking: 25 minutes
Total: 35 minutes



  • 1tsplobster base,such as Better Than Bouillon ®, or to taste
  • 2tbspbutter
  • 6dover sole fillets
  • 1shallot,minced
  • ½red bell pepper,diced
  • 2small garlic cloves,minced
  • 1tbspextra virgin olive oil,or to taste
  • 3sprigsfresh parsley
  • ½tspLebanese zaatar
  • salt and ground black pepper,to taste


  1. Preheat an outdoor grill for medium-high heat and lightly oil the grate. Roll out a little more than 1-foot of aluminum foil. Repeat with a second sheet and place it on top of the first.

  2. Spoon lobster base in the center of the foil; top with butter. Place the Dover sole on top of the butter and add shallot, red bell pepper, and garlic.

  3. Drizzle olive oil over garlic layer and top with parsley, zaatar, salt, and pepper. Gently roll fish to mix ingredients. Wrap foil around the mixture and seal tightly.

  4. Place foil packet on the edge of the direct heat zone on the preheated grill; cook until fish flakes easily with a fork for about 20 minutes.

  5. Take packet off the grill and allow to cook from the steam for 5 minutes more.
