How To Make Grilled Chicken & Veggies Over Rice

Serves:

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 bell peppers, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 cups cooked rice

Instructions

  1. Preheat grill to medium-high heat.

  2. In a small bowl, mix together garlic powder, paprika, dried oregano, salt, and pepper.

  3. Rub the chicken breasts with the spice mixture.

  4. Place the chicken on the grill and cook for 6-8 minutes per side, or until cooked through.

  5. In a large bowl, toss the sliced bell peppers, zucchini, and red onion with olive oil, salt, and pepper.

  6. Grill the veggies for 5-7 minutes, or until they are tender-crisp.

  7. Slice the grilled chicken into strips.

  8. Serve the grilled chicken and veggies over cooked rice.

  9. Enjoy!
