How To Make Mexican Corn (Elote)
Turn your grill-outs around with this flavorful Mexican corn! It’s got a kick of spice and is grilled to charred perfection.
Serves:
Ingredients
- 4corn on the cob
- 1tbspolive oil
- salt and pepper,to taste
- ⅓cupmayonnaise
- ⅓cupsour cream,or crema
- ½tspancho chile powder
- ½tspcumin
- 1tbspcilantro,chopped, plus extra for serving
- ½cupcotija cheese,or feta cheese
- lime wedges
Instructions

Preheat grill to medium heat.

On a plate, mix mayonnaise, sour cream, chile powder, cumin and cilantro.

Brush corn with olive oil and season with salt and pepper to taste.

Grill for 8 to 12 minutes or until cooked and lightly browned.

Roll or brush corn in the mayonnaise mixture, then sprinkle with cheese.

Serve with lime, and enjoy!
