How To Make Mexican Corn (Elote)

Turn your grill-outs around with this flavorful Mexican corn! It’s got a kick of spice and is grilled to charred perfection.

  • 4corn on the cob
  • 1tbspolive oil
  • salt and pepper,to taste
  • cupmayonnaise
  • cupsour cream,or crema
  • ½tspancho chile powder
  • ½tspcumin
  • 1tbspcilantro,chopped, plus extra for serving
  • ½cupcotija cheese,or feta cheese
  • lime wedges


  1. Preheat grill to medium heat.

  2. On a plate, mix mayonnaise, sour cream, chile powder, cumin and cilantro.

  3. Brush corn with olive oil and season with salt and pepper to taste.

  4. Grill for 8 to 12 minutes or until cooked and lightly browned.

  5. Roll or brush corn in the mayonnaise mixture, then sprinkle with cheese.

  6. Serve with lime, and enjoy!
