Ingredients

  • 1.5 lbs lamb chops
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 4 shallots, thinly sliced
  • 2 tbsp balsamic vinegar
  • 2 tbsp brown sugar
  • 2 bell peppers, sliced
  • 2 zucchinis, sliced
  • 1 eggplant, sliced
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the olive oil, garlic, lemon juice, honey, rosemary, thyme, salt, and pepper. Place the lamb chops in a dish and pour the marinade over them. Allow to marinate for at least 1 hour.

  2. In a small saucepan, heat some oil and add the shallots. Cook until caramelized, then add the balsamic vinegar and brown sugar. Cook for another 5 minutes until thickened. Set aside.

  3. Preheat a grill or grill pan over medium heat. Remove the lamb chops from the marinade and grill for about 4-5 minutes per side for medium-rare. Let them rest for a few minutes before serving.

  4. Meanwhile, heat a griddle pan over medium-high heat. Brush the vegetables with vegetable oil and season with salt and pepper. Grill the vegetables for a few minutes on each side until tender and slightly charred.

  5. Serve the grilled lamb chops with the shallot marmalade and griddled vegetables.
