How To Make Lisa’s Favorite Carne Asada Marinade

  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 3 tbsp soy sauce
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 2 lbs beef skirt or flank steak


  1. In a bowl, combine orange juice, lime juice, soy sauce, olive oil, garlic, cumin, smoked paprika, chili powder, black pepper, and cayenne pepper. Mix well.

  2. Place the steak in a large resealable plastic bag and pour the marinade over it.

  3. Seal the bag tightly and massage the marinade into the steak, making sure it is evenly coated. Marinate in the refrigerator for at least 2 hours, or overnight for best results.

  4. Preheat the grill to medium-high heat.

  5. Remove the steak from the marinade and discard the excess marinade.

  6. Grill the steak for about 7-8 minutes per side, or until it reaches your desired level of doneness.

  7. Remove the steak from the grill and let it rest for a few minutes before slicing thinly against the grain.

  8. Serve the carne asada with warm tortillas, salsa, guacamole, and your favorite toppings.
