How To Make Lime Butter Salmon in Foil with Summer Veggies

Tangy and smoky all at once, this lime butter salmon with summer vegetables is grilled in foil to yield a flakier and softer fish and tender-crisp veggies!

  • 4salmon fillets
  • salt and pepper
  • 6tbspbutter,melted
  • 1tbsplime juice
  • 1lime,zested
  • 2small zucchini
  • 2small yellow squash
  • 1lbasparagus
  • 1small red onion,cut into chunks
  • 1red pepper,sliced
  • 1lime,cut into 4 wedges
  • fresh parsley,for garnish


  1. Heat the grill to medium heat. Cut 4 sheets, enough to wrap the salmon and vegetables, of heavy duty foil.

  2. Place the salmon on center of aluminum foil and divide the veggies into each packet.

  3. In a small bowl, add the melted butter, lime juice, and zest of lime and mix. Pour evenly into each packet.

  4. Add the lime wedge in each packet and bring up 2 sides of foil over salmon so edges meet. Seal edges, making tight ½-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.

  5. Place the salmon packets onto grill and grill for 13 to 15 minutes, flipping at about 7 minutes.

  6. Carefully open packets, garnish with parsley, serve, and enjoy!
