
How To Make Lime Butter Salmon in Foil with Summer Veggies
Tangy and smoky all at once, this lime butter salmon with summer vegetables is grilled in foil to yield a flakier and softer fish and tender-crisp veggies!

Ingredients
- 4salmon fillets
- salt and pepper
- 6tbspbutter,melted
- 1tbsplime juice
- 1lime,zested
- 2small zucchini
- 2small yellow squash
- 1lbasparagus
- 1small red onion,cut into chunks
- 1red pepper,sliced
- 1lime,cut into 4 wedges
- fresh parsley,for garnish
Instructions

Heat the grill to medium heat. Cut 4 sheets, enough to wrap the salmon and vegetables, of heavy duty foil.

Place the salmon on center of aluminum foil and divide the veggies into each packet.

In a small bowl, add the melted butter, lime juice, and zest of lime and mix. Pour evenly into each packet.

Add the lime wedge in each packet and bring up 2 sides of foil over salmon so edges meet. Seal edges, making tight ½-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.

Place the salmon packets onto grill and grill for 13 to 15 minutes, flipping at about 7 minutes.

Carefully open packets, garnish with parsley, serve, and enjoy!
