How To Make Grilled Wild Salmon with Anchovies, Capers & Lentils

Ingredients

  • 4 wild salmon fillets (6 oz each)
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp lemon juice
  • Salt and black pepper, to taste
  • 4 anchovy fillets, rinsed and chopped
  • 2 tbsp capers, drained
  • 1 cup cooked lentils

Instructions

  1. Preheat the grill to medium-high heat.

  2. Brush the salmon fillets with olive oil and lemon juice. Season with salt and black pepper.

  3. Grill the salmon for about 4-5 minutes per side, or until cooked through and slightly charred.

  4. In a small bowl, combine the anchovies, capers, and cooked lentils. Mix well.

  5. Serve the grilled salmon topped with the anchovy, caper, and lentil mixture.
