How To Make Grilled Vegetables
Try out these flavored grilled vegetables for your next side dish! They’re seasoned and grilled to perfection, and takes only 30 minutes to make.
Serves:
Ingredients
- 2lbsassorted vegetables,trimmed and halved or cut into 2 inch pieces
- 5tbspolive oil
- 2tbsplemon juice
- 1tspsalt
- ¼tsppepper
- 1½tspdried Italian seasoning
- 1½tspgarlic,minced
- ¼cupparsley leaves,chopped
- lemon wedges,for serving, optional
Instructions

Place the olive oil, lemon juice, salt, pepper, Italian seasoning and minced garlic in a large bowl. Whisk to combine.

Add the vegetables to the bowl, then toss to coat.

Cover and refrigerate for at least 20 minutes or up to 2 hours.

Preheat a grill or grill pan to medium high heat.

Add the denser vegetables first, then cook for 3 to 4 minutes.

Add the rest of the vegetables to the grill.

Cook the vegetables for 3 to 5 minutes per side or until browned and tender.

Place the vegetables on a serving plate, then sprinkle with parsley and garnish with lemon wedges.

- For assorted vegetables, we recommend using a combination of asparagus, mushrooms, red onion, red bell peppers, baby carrots and yellow squash.
