How To Make Grilled Vegetables

Try out these flavored grilled vegetables for your next side dish! They’re seasoned and grilled to perfection, and takes only 30 minutes to make.

Cooking: 15 minutes
Total: 25 minutes



  • 2lbsassorted vegetables,trimmed and halved or cut into 2 inch pieces
  • 5tbspolive oil
  • 2tbsplemon juice
  • 1tspsalt
  • ¼tsppepper
  • tspdried Italian seasoning
  • tspgarlic,minced
  • ¼cupparsley leaves,chopped
  • lemon wedges,for serving, optional


  1. Place the olive oil, lemon juice, salt, pepper, Italian seasoning and minced garlic in a large bowl. Whisk to combine.

  2. Add the vegetables to the bowl, then toss to coat.

  3. Cover and refrigerate for at least 20 minutes or up to 2 hours.

  4. Preheat a grill or grill pan to medium high heat.

  5. Add the denser vegetables first, then cook for 3 to 4 minutes.

  6. Add the rest of the vegetables to the grill.

  7. Cook the vegetables for 3 to 5 minutes per side or until browned and tender.

  8. Place the vegetables on a serving plate, then sprinkle with parsley and garnish with lemon wedges.

  9. Serve, and enjoy!

  • For assorted vegetables, we recommend using a combination of asparagus, mushrooms, red onion, red bell peppers, baby carrots and yellow squash.
