How To Make Grilled Squash

Brimming with smoky hints, this grilled squash offers an herbed side dish. It's seasoned with fragrant herbs and savory seasonings.

  • 3 medium yellow summer squash, or a mix of squash and small zucchini
  • tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp kosher salt
  • red pepper flakes, (2 pinches) optional


  1. Preheat a grill to medium-high heat or 375 to 450 degrees F.

  2. Slice the squash on the bias, about ½-inch thick. Place it in a bowl and mix it with olive oil, oregano, garlic powder, onion powder, kosher salt, and red pepper flakes.

  3. Place the squash directly on the grill grates and grill for about 2 to 3 minutes per side, until charred and tender. Taste and add a few pinches of additional salt if necessary.

  4. Serve and enjoy.
