  • 3garlic cloves,crushed
  • 1tspolive oil
  • tbspdijon mustard
  • 2tbsplemon juice,fresh
  • tbspfresh oregano,or 2 tsp dry oregano
  • 1tspkosher salt and fresh cracked pepper,or to taste
  • 16ozchicken breasts,skinless, boneless, cut into 1-inch cubes
  • ½red onion,quartered, layers separated
  • 4lemon wedges,for serving

  1. Combine the garlic, oil, Dijon mustard, lemon juice, oregano, salt, and pepper in a medium bowl.

  2. Place the chicken in a gallon-sized bag and pour the marinade over it. Refrigerate overnight.

  3. Thread the chicken and onion layers onto the skewers.

  4. Heat an outdoor grill or indoor grill pan over medium-high heat.

  5. Spray the grates lightly with oil and grill for about 5 minutes on each side, or until the center is no longer pink.

  6. Serve with fresh lemon wedges, and enjoy!
