How To Make Cilantro Lime Chicken

Grill up some tasty chicken for lunch with our piquant lime chicken dish! It’s perfectly seasoned and makes the perfect full meal.

Preparation: 10 minutes
Cooking: 25 minutes
Marinate Time: 30 minutes
Total: 1 hour 5 minutes
Serves:

Ingredients

  • 2lbschicken thighsboneless or breasts
  • 1limefor serving

For Marinade:

  • 2tbsplime juicefresh
  • ¼cupcilantrofresh, minced plus extra for garnish
  • tbsphoney
  • 2garlic clovesminced
  • 1tspcumin
  • 1tspchili powder
  • 1tbspolive oil
  • ¾tspkosher salt
  • ½tspblack pepper

Instructions

Marinate:

  1. Combine the lime juice, cilantro, honey, garlic, cumin, chili powder, olive oil, salt, and black pepper in a small bowl.

  2. Pour the marinade over the chicken.

  3. Marinate for 30 minutes or up to 2 hours.

To Grill:

  1. Preheat the grill to medium high heat.

  2. Cook the chicken on an oiled grate for 7 to 8 minutes.

  3. Turn over and cook for an additional 7 to 8 minutes or until the chicken reaches 165 degrees F.

To Bake:

  1. Preheat the oven to 400 degrees F.

  2. Place the chicken on a baking sheet and bake 20 to 25 minutes or until the chicken reaches 165 degrees F.

  3. Let rest for 5 minutes.

  4. Serve with lime slices and additional chopped cilantro, and enjoy!
