
How To Make Chipotle-Marinated Pork Tenderloin with Black Bean Salsa
Pork tenderloin is marinated in Chipotle chile and spices, roasted, and then served with a healthy and filling black bean salsa for a filling dinner meal!

Ingredients
- 1canchipotle chile
- 3garlic cloves
- ½cupwhite onion,coarsely chopped
- 2tbspfresh lime juice
- 1tspsherry vinegar
- 1tspMexican oregano,dried
- 1lbpork tenderloin
- 1canblack beans
- 1cupgrape tomatoes
- ¼cupwhite onion,finely chopped
- ¼cupfresh cilantro,finely chopped
- 3tbspfresh lime juice
- 2tspchipotle chile,minced, canned
- ½tspground cumin
Instructions

Process chile, garlic, onion, lime juice, vinegar, and oregano in a blender until smooth.

Rub marinade all over the pork. Transfer pork to a dish, and cover with plastic wrap. Refrigerate overnight.

Preheat oven to 350 degrees F.

Heat a grill pan over high heat. Grill the pork for about 2 minutes per side until seared on all sides.

Transfer pan to the oven, then cook for about 20 to 25 minutes, until an instant-read thermometer inserted into center of meat registers 145 degrees F.

Let pork stand at room temperature 5 to 10 minutes before slicing.

Stir together the black beans, tomatoes, onion, cilantro, lime juice, chile, and cumin in a small bowl. Serve with the pork.
