How To Make Chipotle-Marinated Pork Tenderloin with Black Bean Salsa

Pork tenderloin is marinated in Chipotle chile and spices, roasted, and then served with a healthy and filling black bean salsa for a filling dinner meal!

  • 1canchipotle chile
  • 3garlic cloves
  • ½cupwhite onion,coarsely chopped
  • 2tbspfresh lime juice
  • 1tspsherry vinegar
  • 1tspMexican oregano,dried
  • 1lbpork tenderloin
  • 1canblack beans
  • 1cupgrape tomatoes
  • ¼cupwhite onion,finely chopped
  • ¼cupfresh cilantro,finely chopped
  • 3tbspfresh lime juice
  • 2tspchipotle chile,minced, canned
  • ½tspground cumin


  1. Process chile, garlic, onion, lime juice, vinegar, and oregano in a blender until smooth.

  2. Rub marinade all over the pork. Transfer pork to a dish, and cover with plastic wrap. Refrigerate overnight.

  3. Preheat oven to 350 degrees F.

  4. Heat a grill pan over high heat. Grill the pork for about 2 minutes per side until seared on all sides.

  5. Transfer pan to the oven, then cook for about 20 to 25 minutes, until an instant-read thermometer inserted into center of meat registers 145 degrees F.

  6. Let pork stand at room temperature 5 to 10 minutes before slicing.

  7. Stir together the black beans, tomatoes, onion, cilantro, lime juice, chile, and cumin in a small bowl. Serve with the pork.
