- 2large eggs
- 1cupsugar
- ½cupvegetable oil
- 1cuppumpkin puree
- 1¼cupsflour
- 1tspcinnamon
- 1tspbaking powder
- ½tspbaking soda
- ¼tspsalt
- ½cupdried cranberries,chopped, divided
Instructions

Preheat the oven to 350 degrees F and spray an 8×8-inch baking pan with baking spray.

In a large mixing bowl, whisk together the eggs, sugar, oil, pumpkin and â…“ cup of cranberries, until well combined.

In another bowl, sift together the flour, cinnamon, baking powder, baking soda and salt.

Add flour mixture to the pumpkin mixture, then whisk until just combined.

Pour the mixture into baking dish and spread evenly. Top with the remaining cranberries.
