Preparation: 15 minutes
Cooking: 40 minutes
Total: 55 minutes

Serves:

Ingredients

  • 2 cups fresh raspberries
  • 2 cups fresh blueberries
  • ¼ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • For the topping:
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • ¼ cup milk

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a bowl, combine the raspberries, blueberries, sugar, cornstarch, lemon juice, and vanilla extract. Mix well to coat the berries.

  3. Transfer the berry mixture to a 9-inch pie dish or similar baking dish, spreading it out evenly.

  4. In a separate bowl, whisk together the flour, sugar, baking powder, and salt.

  5. Add the cold cubed butter to the dry mixture and use your fingers or a pastry cutter to cut it into the flour until it resembles coarse crumbs.

  6. Pour in the milk and stir until the dough just comes together.

  7. Drop spoonfuls of the biscuit dough over the berry mixture, covering the top as evenly as possible.

  8. Bake for 35-40 minutes, or until the topping is golden brown and the berries are juicy and bubbling.

  9. Remove from the oven and let cool for a few minutes before serving.

  10. Serve warm with a scoop of vanilla ice cream or whipped cream.
