Ingredients

  • ¾cupapple juice
  • ½cuppomegranate juice
  • 1long orange rind strip,2-inch
  • 1cinnamon stick
  • 2pears,peeled, halved, and cored
  • 5.3ozyogurt,used Silk Vanilla DairyFree Yogurt Alternative

Instructions

  1. In a small pan over medium-high heat, bring the apple juice, pomegranate juice, orange rind and cinnamon stick to a boil.

  2. Place pears face down in the pan.

  3. Lower the heat and simmer gently for 10 to 20 minutes until a knife inserted into the pears meets no resistance, spooning the sauce over the pears as they cook.

  4. Once the pears are tender, remove from heat and let cool.

  5. Over medium-low heat, reduce the remaining poaching liquid to a glaze for 7 to 8 minutes.

  6. Pour the glaze over the pears. Refrigerate to chill.

  7. Place ½ pear on each dish, top with a dollop of yogurt over each, and enjoy!
