How To Make Plum Compote with Star Anise

A European dessert, this plum compote simmers the fruit with wine, sugar, and spice, then mixes it with lemon juice for some sweet and tangy flavors.

  • cupdry white wine
  • cupwater
  • ½cupsugar
  • 8wholestar anise
  • 2lbsred plums,and/or black, (about 9)
  • ½tsplemon juice


  1. In a medium stainless-steel saucepan, combine the wine, water, sugar, and star anise and bring to a simmer over moderately high heat.

  2. Add the plums.

  3. Bring the poaching liquid back to a simmer and cook, partially covered, for 10 to 15 minutes until the plums are just tender.

  4. Pour the plums and their liquid into a glass or stainless-steel bowl and let cool.

  5. Stir in the lemon juice.
