  • 4 cups fresh peaches, peeled and sliced
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1/4 cup coconut sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup almond milk
  • 2 tablespoons coconut oil, melted
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large mixing bowl, combine the sliced peaches, honey, and vanilla extract. Stir until well coated.

  3. In another bowl, whisk together the whole wheat flour, coconut sugar, baking powder, cinnamon, and salt.

  4. Add the almond milk and melted coconut oil to the dry ingredients. Stir until just combined.

  5. In a small bowl, mix the cornstarch with 2 tablespoons of water to make a slurry. Pour the slurry over the peaches and gently toss to coat.

  6. Transfer the peach mixture to a 9-inch baking dish. Drop spoonfuls of the batter on top of the peaches.

  7. Bake for 35-40 minutes, or until the topping is golden and cooked through.

  8. Remove from the oven and let cool for a few minutes before serving.

  9. Serve warm with a scoop of vanilla ice cream or whipped cream, if desired.
