Ingredients

  • 1 large onion, thinly sliced
  • 1 small butternut squash, peeled and grated
  • 1 cup gram flour
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • Salt to taste
  • Vegetable oil for frying
  • 4 rotis
  • 1 ripe mango, diced
  • 1 cup plain yogurt
  • Handful fresh mint leaves, chopped
  • Juice of 1 lime
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine the sliced onions, grated butternut squash, gram flour, cumin, coriander, turmeric powder, chili powder, and salt. Mix well until everything is combined.

  2. Heat vegetable oil in a deep frying pan over medium heat. Drop spoonfuls of the onion and butternut squash mixture into the hot oil and fry until golden brown and crispy.

  3. Remove the bhajis from the oil and place them on a paper towel-lined plate to remove any excess oil.

  4. In a separate bowl, mix together the diced mango, plain yogurt, chopped mint leaves, lime juice, salt, and black pepper to make the mango raita.

  5. Heat the rotis according to package instructions or on a hot griddle.

  6. Serve the crispy onion and butternut bhajis with the warm rotis, mango raita, and a side of mint salad.
