Ingredients

  • 1.5 lbs lamb, cut into cubes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 can (14 oz) diced tomatoes
  • 1 can (13.5 oz) coconut milk
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a slow cooker, add the lamb, onion, garlic, ginger, curry powder, turmeric, cumin, coriander, diced tomatoes (with juice), and coconut milk. Season with salt and pepper.

  2. Stir everything together to combine well.

  3. Cook on low for 4 hours or until the lamb is tender and the flavors are well-developed.

  4. Serve hot over rice or with naan bread.

  5. Garnish with fresh cilantro.
