Ingredients

  • 4 medium-sized carrots, grated
  • 3 cups milk
  • 1/2 cup sugar
  • 4 tablespoons ghee (clarified butter)
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons chopped nuts (cashews, almonds, pistachios) for garnish

Instructions

  1. Heat ghee in a pan and add the grated carrots. Cook on medium heat for 5 minutes, stirring occasionally.

  2. Add the milk to the pan and bring to a boil. Reduce the heat to low and simmer until the carrots are cooked and the milk has reduced, stirring occasionally (approximately 30-40 minutes).

  3. Add the sugar and cardamom powder to the pan. Mix well and continue to cook for another 10-15 minutes until the mixture thickens and starts to leave the sides of the pan.

  4. Remove from heat and garnish with chopped nuts.

  5. Serve hot or cold.
