How To Make One-pot Prawn & Lentil Curry

Ingredients

  • 1 tbsp oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 1 red chili, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 cup red lentils
  • 2 cups vegetable broth
  • 1 can coconut milk
  • 1 lb prawns, peeled and deveined
  • Juice of 1 lime
  • Salt to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Heat the oil in a large pot over medium heat. Add the onion, garlic, ginger, and chili. Cook until the onion is translucent and the spices are fragrant, about 5 minutes.

  2. Add the ground cumin, coriander, and turmeric. Stir to coat the onion mixture with the spices.

  3. Add the red lentils, vegetable broth, and coconut milk to the pot. Bring to a simmer and cook for 15 minutes, or until the lentils are tender.

  4. Add the prawns to the pot and cook for an additional 5-7 minutes, or until they are pink and cooked through.

  5. Stir in the lime juice and season with salt to taste.

  6. Serve the prawn and lentil curry over rice or with naan bread. Garnish with fresh cilantro.
