Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 green bell peppers, sliced into strips
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 1 tablespoon curry powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1 cup vegetable broth
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.

  2. Add the onion and garlic and cook until softened, about 5 minutes.

  3. Add the bell peppers, chickpeas, tomatoes, curry powder, cumin, coriander, cayenne pepper, and salt.

  4. Stir to combine and then pour in the vegetable broth.

  5. Bring the mixture to a simmer and let cook for 20 minutes, until the sauce has thickened and the peppers are tender.

  6. Serve the curry garnished with fresh cilantro.
