How To Make Pumpkin Blondies
Soft, chewy, and a little earthy, these pumpkin blondies are best served with coffee or tea. Top with cinnamon sugar for a fragrant and savory flavor.

Ingredients
- 1cupunsalted butter,softened
- 1cupsugar
- 1cupbrown sugar
- ⅔cuppumpkin puree
- 1egg yolk
- 2tspvanilla extract
- 2¾cupsall-purpose flour,+ 2 tablespoons
- 1½tsppumpkin spice
- ¾tspsalt
- ¼tspbaking powder
For Topping:
- 2tbspsugar
- ¾tspground cinnamon
Instructions

Preheat oven to 350 degrees F and prepare a 13×9-inch pan by lining with parchment paper or lightly spraying with baking spray. Set aside.

Using an electric mixer, beat together butter and sugars until well combined.

Add pumpkin puree, egg yolk, and vanilla extract. Beat until combined

In a separate bowl, whisk together the flour, pumpkin spice, salt, and baking powder.

Gradually add dry ingredients to wet, stirring on low speed until completely combined.

Spread batter evenly into prepared baking pan.

In a small bowl, whisk together white sugar and cinnamon.

Evenly sprinkle over blondie batter.

Transfer to oven and bake for 25 minutes.
