Ingredients

  • 8 oz chocolate cookies
  • 5 tbsp unsalted butter, melted
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Crush the chocolate cookies in a food processor and mix in melted butter until well combined.

  2. Press the mixture evenly into a 9-inch pie dish and chill in the refrigerator for at least 30 minutes.

  3. In a large bowl, beat the heavy cream until soft peaks form.

  4. Add powdered sugar and vanilla extract and continue to beat until stiff peaks form.

  5. Melt the chocolate chips in a double boiler and let cool slightly.

  6. Fold the melted chocolate into the whipped cream mixture until fully incorporated.
