Ingredients

  • 2 cups huckleberries
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
  • 2 pie crusts

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large mixing bowl, combine the huckleberries, sugar, cornstarch, and lemon juice. Mix until well combined.

  3. Roll out one of the pie crusts and place it in a 9-inch pie pan.

  4. Pour the huckleberry filling into the pie crust and dot with small pieces of butter.

  5. Roll out the second pie crust and place it on top of the filling. Seal the edges of the crusts together and cut slits in the top crust to allow steam to escape.

  6. Bake in the preheated oven for 45-55 minutes, or until the crust is golden brown and the filling is bubbling.

  7. Remove from the oven and let cool for at least 1 hour before serving.
