Preparation: 15 minutes
Cooking: 45 minutes
Total: 1 hour

Serves:

Ingredients

  • 1 sheet of puff pastry
  • 4 sausages, casings removed
  • 2 leeks, thinly sliced
  • 1 tablespoon olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon dried thyme
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large pan, heat the olive oil over medium heat. Add the sausage meat and cook until browned, breaking it up with a spoon.

  3. Add the leeks, garlic, dried thyme, salt, and pepper to the pan. Cook for an additional 5 minutes, until the leeks are softened.

  4. Pour in the chicken broth and simmer for 10 minutes, until the liquid has reduced slightly.

  5. Roll out the puff pastry and line a pie dish with it. Trim off any excess pastry.

  6. Spoon the sausage and leek mixture into the pastry-lined dish.

  7. Cover the pie with another sheet of puff pastry, trimming and crimping the edges to seal.

  8. Cut a few slits on the top of the pie to allow steam to escape.

  9. Bake in the preheated oven for 30 minutes, until the pastry is golden and crisp.

  10. Remove from the oven and let it cool for a few minutes before serving.
