Ingredients

  • 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 package store-bought pie crusts

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the mixed berries, sugar, cornstarch, lemon juice, and vanilla extract. Mix well to combine.

  3. Roll out one pie crust and press it into a pie dish.

  4. Pour the berry mixture into the pie crust.

  5. Roll out the second pie crust and place it on top of the berry mixture. Pinch the edges of the crusts together to seal.

  6. Cut a few slits on the top crust to allow steam to escape during baking.

  7. Bake the pie in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.

  8. Remove from the oven and allow to cool before serving.
