Roll up this puran poli recipe for a light Indian dessert. A puffy flat bread rolled up with a buttery sweet filling packed with spices and flavor.

Ingredients

For Puran (dal stuffing):

  • cups chana dal
  • ¼ tsp turmeric
  • 1⁄2 tsp ghee
  • 3 cups water
  • cups jaggery
  • 1 tsp ghee
  • 1⁄2 tsp cardamom powder

For Poli (outer covering):

  • 2 cup wheat flour
  • 1 cup maida
  • 1⁄4 tsp turmeric
  • 1⁄4 tsp salt
  • 2 tbsp oil, plus 2 tsp
  • water, for kneading

For Dusting:

  • maida
  • ghee

Instructions

To Make Puran/Chana Dal Stuffing:

  1. In a large bowl, soak 1½ cup chana dal for 1 hour. Drain water and transfer chana to a pressure cooker.
  2. Add turmeric, ghee, and water. Cover the pressure cooker and cook for 9 minutes or 3 whistles on medium flame. Drain the water.
  3. Transfer dal to a thick bottom pan or kadai on medium low heat. Add jaggery and mix well. Once jaggery melts, start mashing dal until it turns into a smooth paste. Keep cooking until mixture thickens and holds shape.
  4. Add ghee and cardamom powder and cook for 1 minute, or until mixture doesn't stick to the pan. If the mixture is undercooked stuffing will be sticky and is difficult to mold into a ball.
  5. Transfer mixture to a plate and cool for 3 minutes. Grease hands with ghee and shape dal into balls. Set aside.

To Prepare Poli (outer covering):

  1. In a large bowl, add flour, maida, and turmeric. Add 2 tablespoons oil and season with salt. Mix until ingredients are combined.
  2. Add water as needed and start to knead the dough. Work the dough until smooth and soft. Add water in small batches.
  3. Grease the dough with 2 teaspoons of oil, cover, and rest for at least 1 hour.
  4. Punch and knead dough. Pinch a small portion and make a smooth ball. form a cup by pressing dough from the sides. Place a ball sized puran or dal stuffing.
  5. start to stuff dal inside by pulling the dough over it. Seal dough without cracks.
  6. Dust the ball with maida and flatten slightly. Now roll dough gently as thin as possible.
  7. Cook puran poli on a hot pan with ghee or tawa on medium heat. Flip over once the first side is half cooked. Puff the puran poli and cook uniformly.
  8. Serve with a glass of milk. Enjoy.
