How To Make Mini Southern Pecan Pies

- 1 cup pecans, chopped
- 1/2 cup light corn syrup
- 1/2 cup brown sugar
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 eggs, beaten
- 1 package refrigerated pie crusts
Instructions

Preheat the oven to 350°F (175°C).

In a bowl, mix together the chopped pecans, corn syrup, brown sugar, melted butter, vanilla extract, salt, and beaten eggs until well combined.

Roll out the refrigerated pie crusts and cut out circles to fit into a mini muffin tin.

Press the pie crust circles into the muffin tin cups, making sure the crusts come up the sides.

Spoon approximately 1 tablespoon of the pecan filling into each mini pie crust.

Bake in the preheated oven for 25-30 minutes, or until the filling is set and the crust is golden brown.
