How To Make Mile-High Lemon Meringue Pie

Ingredients

  • 3 tbsp flour
  • 1/4 cup cornstarch
  • 1 ¾ cup sugar
  • ¼ tsp. salt
  • 4 egg yolks, slightly beaten
  • ½ cup lemon juice
  • 1 tbsp lemon peel, grated
  • 1 tbsp butter
  • 2 cups water
  • 1 pie shell, (9-inch), baked

Meringue:

  • 6 egg whites, ¾ cups at room temperature
  • 1/2 tsp cream of tartar
  • 3/4 cup sugar

Instructions

  1. In medium saucepan, combine cornstarch, flour, 1/3 4 C. sugar and the salt, mixing well.
  2. Gradually add 2 C. water, stirring until smooth.
  3. Over medium heat, bring to boiling, stirring occasionally; boil 1 minute.
  4. Remove from heat.
  5. Quickly stir some of hot mixture into egg yolks.
  6. Return to hot mixture; stir to blend.
  7. Return to heat; cook over low heat 5 minutes, stirring occasionally.
