An incredibly easy recipe for berry pie that most of the total time is just down to chilling it overnight. A delicate and light lemon berry pie with a buttery graham pie crust which holds the jello-infused base with sweet and tart lemon flavor along with berries for that delightfully refreshing piece of tart pie with whipped cream topping.

  • 2/3 cup water, boiling
  • 1 Jell-O Brand Lemon Flavor Gelatin
  • ice cubes
  • 1/2 cup water, cold
  • 2 tsp. lemon peel, grated
  • 1 tbsp. fresh lemon juice
  • 8 oz. Cool Whip Whipped Topping, thawed
  • 2 cups mixed strawberry slices, blueberries and raspberries, divided
  • 6 oz. Honey Maid Graham Pie Crust


  1. Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved.
  2. Add enough ice to cold water to measure 1 C.
  3. Add to gelatin; stir until slightly thickened.
  4. Remove any unmelted ice.
  5. Add lemon peel, juice and whipped topping; stir with wire whisk until well blended.
  6. Add 1 C. of the fruit; stir gently until well blended.
  7. Refrigerate 20-30 minutes or until mixture is very thick and will mound.
  8. Spoon into crust.
  9. Refrigerate 6 hours or overnight until firm.
  10. Top with remaining fruit just before serving.
  11. Store leftover pie in refrigerator.
  12. Garnish with fresh mint sprigs just before serving.
