How To Make Jewelled Mince Pies

What better way to get you in a happy mood than having a slice of pie? These baked dishes are perfect for those who can’t get enough of flaky pastries. From an apple variant to a lemon meringue, these pies pastries recipes will satisfy your pie and pastry cravings.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/4 cup ice water
  • 1/2 cup mincemeat filling
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pistachios
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a bowl, combine the flour, butter, sugar, and salt. Use your fingertips to rub the butter into the flour until it resembles breadcrumbs.

  3. Gradually add the ice water, a tablespoon at a time, and stir until the dough comes together. Shape the dough into a ball and wrap it in plastic wrap. Chill in the refrigerator for 20 minutes.

  4. Roll out the chilled dough on a floured surface to about 1/8 inch thick. Use a round cookie cutter to cut out 8 circles, re-rolling the dough as needed.

  5. Press each dough circle into a greased muffin tin, forming a mini pie crust. Fill each crust with a spoonful of mincemeat filling.

  6. Top each pie with a sprinkle of dried cranberries and chopped pistachios, pressing them gently into the filling.

  7. Brush the edges of the pie crusts with beaten egg. This will give them a golden, shiny finish.

  8. Bake in the preheated oven for 15 minutes, or until the crust is golden and the filling is bubbling. Remove from the oven and allow to cool before serving.
