Serves:
Ingredients
- 1 cup all-purpose flour
- 1/4 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 tsp salt
- 1/4 cup ice water
- 1/2 cup mincemeat filling
- 1/4 cup dried cranberries
- 1/4 cup chopped pistachios
- 1 egg, beaten
Instructions
-
Preheat the oven to 375°F (190°C).
-
In a bowl, combine the flour, butter, sugar, and salt. Use your fingertips to rub the butter into the flour until it resembles breadcrumbs.
-
Gradually add the ice water, a tablespoon at a time, and stir until the dough comes together. Shape the dough into a ball and wrap it in plastic wrap. Chill in the refrigerator for 20 minutes.
-
Roll out the chilled dough on a floured surface to about 1/8 inch thick. Use a round cookie cutter to cut out 8 circles, re-rolling the dough as needed.
-
Press each dough circle into a greased muffin tin, forming a mini pie crust. Fill each crust with a spoonful of mincemeat filling.
-
Top each pie with a sprinkle of dried cranberries and chopped pistachios, pressing them gently into the filling.
-
Brush the edges of the pie crusts with beaten egg. This will give them a golden, shiny finish.
-
Bake in the preheated oven for 15 minutes, or until the crust is golden and the filling is bubbling. Remove from the oven and allow to cool before serving.
