Serves:
Ingredients
- 500g game meat, such as venison or rabbit
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 200ml red wine
- 200ml beef or game stock
- 2 tbsp flour
- 2 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 1 sheet of ready-made puff pastry
- 1 egg, beaten (for egg wash)
Instructions
-
Preheat the oven to 180°C (350°F).
-
In a large, oven-proof pot, brown the game meat over medium-high heat. Remove from the pot and set aside.
-
In the same pot, sauté the onion, garlic, carrot, and celery until softened.
-
Return the game meat to the pot and sprinkle with flour, thyme, rosemary, salt, and pepper. Stir to coat the meat and vegetables.
-
Pour in the red wine and stock, and bring to a simmer. Cover the pot and transfer to the preheated oven.
-
Bake for 2 hours, or until the meat is tender and the sauce has thickened.
-
Remove the pot from the oven and let it cool slightly.
-
Increase the oven temperature to 200°C (400°F).
-
Roll out the puff pastry and use it to cover the game pie filling in the pot. Trim any excess pastry and press the edges to seal.
-
Brush the pastry with beaten egg wash.
-
Make a few vent holes in the pastry to allow steam to escape.
-
Bake the pie in the oven for 25-30 minutes, or until the pastry is golden and flaky.
-
Serve the hot game pie with your favorite sides, such as mashed potatoes or roasted vegetables.
