  • 16 oz solid-pack pumpkin
  • 1 cup evaporated milk, low-fat
  • 3/4 cup honey
  • 3 eggs, slightly beaten
  • 2 tbsp flour
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp rum extract
  • 1 pre-made pastry , for a single 9-inch pie crust


  1. Combine all ingredients except pastry in a large bowl. Beat until well blended. 

  2. Line a 9-inch pie plate with the pastry and pour in the filling.

  3. Bake at 400 degrees for 45 minutes or until knife inserted near center comes out clean. Serve.
