  • 1 ½ cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 ripe bananas, sliced
  • 2 cups milk
  • ½ cup granulated sugar
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Whipped cream and additional banana slices for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a small bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a pie dish to form the crust.

  3. Place the banana slices in an even layer over the crust.

  4. In a heavy-bottomed saucepan, whisk together the milk, sugar, cornstarch, and salt.

  5. Heat the mixture over medium heat, stirring constantly, until it thickens and comes to a boil.

  6. In a separate bowl, beat the eggs. Gradually whisk in about 1 cup of the hot milk mixture to temper the eggs, then pour the egg mixture back into the saucepan.

  7. Continue cooking the mixture, stirring constantly, until it thickens to a pudding consistency.

  8. Remove the saucepan from the heat and stir in the vanilla extract.

  9. Pour the pudding over the banana slices in the pie dish.

  10. Let the pie cool to room temperature, then refrigerate for at least 2 hours to set.

  11. Serve chilled, topped with whipped cream and additional banana slices.
