Great Greek Spinach Pie Recipe

This dish can be served as a side or mail dish by adding a salad or even soup. Crunchy on the outside and smooth and salty on the inside. Who could ask for more? You can use also puff pastry or the bisquick dough recipe instead of the phyllo if you prefer.


How To Make Great Greek Spinach Pie

Ingredients

  • 6 oz feta cheese
  • 1 cup butter , or margarine, melted or butter flavored cooking spray
  • 1 small shallot, minced
  • 12 sheet phyllo, defrosted
  • 2 box frozen spinach, thawed and squeezed dry
  • 2 eggs, beaten
  • 2 tbsp butter , or margarine
  • 3 grind black pepper

Instructions

  1. In a medium saucepan under medium heat, sauté shallot in 2 Tbs butter and then cool. Add all ingredients except 1 cup butter/spray and mix well.

  2. Lay out phyllo on cutting board and brush butter (or spray) between 6 layers of phyllo. Lay prepared phyllo into rectangular baking dish.

  3. Add spinach mixture, pat down and continue with phyllo, brushing butter between remaining 6 layers of phyllo. Finish with butter on top phyllo.

  4. Bake at 350 degrees for about 25-35 minutes (depending on your oven). Let side about 10 minutes before serving.
