  • 1 cup gluten-free all-purpose flour
  • 1/4 cup coconut sugar
  • 1/4 cup dairy-free butter, melted
  • 2 cups dairy-free milk (such as almond or coconut)
  • 1/2 cup coconut cream
  • 1/2 cup coconut sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Dairy-free whipped cream, for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a mixing bowl, combine the gluten-free flour, coconut sugar, and melted dairy-free butter. Press the mixture into a pie dish to form the crust.

  3. Bake the crust for 10 minutes, then remove from the oven and set aside to cool.

  4. In a saucepan, whisk together the dairy-free milk, coconut cream, coconut sugar, cornstarch, and salt. Place the saucepan over medium heat and cook, stirring continuously, until the mixture thickens and comes to a gentle boil.

  5. Remove the saucepan from the heat and stir in the vanilla extract. Pour the butterscotch filling into the cooled pie crust.

  6. Allow the pie to cool to room temperature, then refrigerate for at least 2 hours to set.

  7. Serve chilled, topped with dairy-free whipped cream if desired.
