How To Make Free-From Butterscotch Pie

- 1 cup gluten-free all-purpose flour
- 1/4 cup coconut sugar
- 1/4 cup dairy-free butter, melted
- 2 cups dairy-free milk (such as almond or coconut)
- 1/2 cup coconut cream
- 1/2 cup coconut sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Dairy-free whipped cream, for garnish (optional)
Instructions

Preheat the oven to 350°F (175°C).

In a mixing bowl, combine the gluten-free flour, coconut sugar, and melted dairy-free butter. Press the mixture into a pie dish to form the crust.

Bake the crust for 10 minutes, then remove from the oven and set aside to cool.

In a saucepan, whisk together the dairy-free milk, coconut cream, coconut sugar, cornstarch, and salt. Place the saucepan over medium heat and cook, stirring continuously, until the mixture thickens and comes to a gentle boil.

Remove the saucepan from the heat and stir in the vanilla extract. Pour the butterscotch filling into the cooled pie crust.
