  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • 1 tbsp olive oil
  • 2 cups marinara sauce
  • 2 cups baby spinach
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a shallow dish, mix together the breadcrumbs, Parmesan, Italian seasoning, garlic powder, salt, and black pepper.

  3. Dip each chicken breast into the beaten eggs, then coat in the breadcrumb mixture, pressing it firmly onto all sides.

  4. Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook until golden brown, about 3-4 minutes per side.

  5. Transfer the chicken to a baking dish and spoon marinara sauce over each breast.

  6. Scatter the baby spinach over the chicken, then sprinkle with mozzarella cheese.

  7. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

  8. Garnish with fresh basil leaves before serving.
