Preparation: 20 minutes
Cooking: 40 minutes
Total: 60 minutes

Serves:

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons butter
  • 1 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh thyme
  • Salt and pepper, to taste
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large skillet, melt the butter over medium heat. Add the mushrooms and garlic, and cook until the mushrooms are tender, about 5 minutes. Stir in the thyme, salt, and pepper. Remove from heat and set aside.

  3. Season the chicken breasts with salt and pepper. In the same skillet, cook the chicken breasts over medium-high heat until browned on both sides, about 3 minutes per side. Remove from heat and set aside.

  4. On a lightly floured surface, roll out the puff pastry to about ¼ inch thick. Cut into 4 squares, large enough to wrap each chicken breast.

  5. Place a chicken breast on each puff pastry square. Spoon the mushroom mixture over the chicken breasts.

  6. Fold the puff pastry over the chicken and mushrooms, pressing the edges to seal. Place the Wellingtons on a baking sheet lined with parchment paper, seam side down.

  7. Brush the tops of the Wellingtons with the beaten egg.

  8. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the chicken is cooked through.

  9. Remove from the oven and let rest for a few minutes before serving.

  10. Serve the Chicken Wellingtons with a side of vegetables or a salad. Enjoy!
