How To Make Goat Cheese and Roasted Red Pepper Stuffed Chicken Breast Recipe

Ingredients
- 4 boneless, skinless chicken breasts
- 4 oz goat cheese
- 1/4 cup roasted red peppers, chopped
- Salt and pepper
- 1 tbsp olive oil
Instructions

Preheat oven to 375°F.

Butterfly each chicken breast by slicing horizontally through the thickest part.

Season both sides with salt and pepper.

In a small bowl, mix together goat cheese and roasted red peppers.

Spread 1-2 tbsp of the goat cheese mixture onto one side of each chicken breast.

Fold the other half of the chicken breast over the stuffing, pressing down firmly to seal.

Heat olive oil in an oven-safe skillet over medium-high heat.

Sear each chicken breast for 2-3 minutes on each side until browned.

Transfer skillet to the oven and bake for 20-25 minutes, or until chicken is cooked through.

Let rest for 5 minutes before slicing and serving.
