How To Make Moroccan Chicken with Sweet Potato Mash

- 4 chicken breasts
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground paprika
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 1 can diced tomatoes
- 1 cup chicken broth
- Salt and pepper to taste
- 2 large sweet potatoes, peeled and cubed
- 1/4 cup butter
- 1/4 cup milk or cream
- Fresh cilantro, chopped (for garnish)
Instructions

Preheat the oven to 375°F (190°C).

Heat olive oil in a large oven-safe skillet over medium heat. Season chicken breasts with salt and pepper, then brown them in the skillet for about 3 minutes per side. Remove the chicken from the skillet and set aside.

In the same skillet, add the chopped onion and minced garlic. Sauté for about 5 minutes until onions are soft and translucent.

Add the ground cumin, coriander, paprika, cinnamon, turmeric, and cayenne pepper (if using). Stir well for about a minute until fragrant.

Pour in the diced tomatoes and chicken broth. Bring to a simmer.

Return the chicken breasts to the skillet, nestling them into the tomato mixture. Cover the skillet and transfer it to the preheated oven.

Bake for 30-35 minutes until the chicken is cooked through and tender.

Meanwhile, cook the sweet potatoes in a large pot of salted boiling water until fork-tender, about 15-20 minutes. Drain and return to the pot.

Add butter and milk/cream to the sweet potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
