  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup butter
  • 1/4 cup milk or cream
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Heat olive oil in a large oven-safe skillet over medium heat. Season chicken breasts with salt and pepper, then brown them in the skillet for about 3 minutes per side. Remove the chicken from the skillet and set aside.

  3. In the same skillet, add the chopped onion and minced garlic. Sauté for about 5 minutes until onions are soft and translucent.

  4. Add the ground cumin, coriander, paprika, cinnamon, turmeric, and cayenne pepper (if using). Stir well for about a minute until fragrant.

  5. Pour in the diced tomatoes and chicken broth. Bring to a simmer.

  6. Return the chicken breasts to the skillet, nestling them into the tomato mixture. Cover the skillet and transfer it to the preheated oven.

  7. Bake for 30-35 minutes until the chicken is cooked through and tender.

  8. Meanwhile, cook the sweet potatoes in a large pot of salted boiling water until fork-tender, about 15-20 minutes. Drain and return to the pot.

  9. Add butter and milk/cream to the sweet potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.

  10. Serve the Moroccan chicken over the sweet potato mash. Garnish with fresh cilantro.
