Savory chicken thighs cooked with mushrooms in a Dutch oven – a comforting and filling meal for any occasion.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tbsp unsalted butter
  • 8 oz sliced mushrooms
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tsp dried thyme
  • 1 tbsp cornstarch
  • 2 tbsp water

Instructions

  1. Preheat the oven to 375°F.

  2. Heat olive oil in a Dutch oven over medium-high heat.

  3. Season the chicken with salt, pepper, and garlic powder.

  4. Brown the chicken on both sides until golden brown, about 5 minutes each side.

  5. Remove chicken from the Dutch oven and set it aside.

  6. Melt butter in the same Dutch oven.

  7. Add sliced mushrooms and minced garlic and cook for 5 minutes or until the mushrooms have browned and the garlic has become fragrant.

  8. Add chicken broth and dried thyme and bring to a boil.

  9. Reduce heat to a simmer and return chicken to the Dutch oven. Cover with a lid.

  10. Bake in the preheated oven for 30-35 minutes or until chicken is cooked through.

  11. Remove chicken from the Dutch oven and set it aside on a plate.

  12. In a small bowl, mix cornstarch and water until smooth.

  13. Return the Dutch oven to medium heat and whisk the cornstarch mixture into the mushroom sauce.

  14. Bring the sauce to a boil and let it simmer for 2-3 minutes or until thickened.

  15. Serve the chicken thighs with mushroom sauce on top.
