  • 2 eggs, beaten

Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a shallow dish, mix together the Parmesan cheese, lemon zest, black pepper, and salt.

  3. Dip each chicken breast into the beaten eggs, then coat with the Parmesan mixture, pressing it onto the chicken to adhere.

  4. Heat olive oil in an oven-proof skillet over medium-high heat.

  5. Add the chicken breasts and cook for 3-4 minutes on each side until golden brown.

  6. Transfer the skillet to the preheated oven and bake for 15-18 minutes until the chicken is cooked through and the crust is crispy.

  7. Remove from the oven and let it rest for a few minutes before serving.
