  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup apricot jam
  • 2 tablespoons soy sauce
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Season the chicken breasts with salt and pepper on both sides.

  3. In a small bowl, mix together the apricot jam, soy sauce, Dijon mustard, olive oil, minced garlic, and dried thyme.

  4. Heat a large skillet over medium-high heat and sear the chicken breasts for 2-3 minutes on each side, until golden brown.

  5. Transfer the chicken breasts to a baking dish and brush the apricot glaze over them.

  6. Bake for 20-25 minutes, or until the chicken is cooked through and the glaze is bubbly and caramelized.
