Preparation: 15 minutes
Cooking: 25 minutes
Total: 40 minutes

  • 4 chicken breasts
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 4 oz Gorgonzola cheese, crumbled
  • Fresh parsley, chopped for garnish

  1. Season the chicken breasts with salt and pepper.

  2. Heat olive oil in a large skillet over medium-high heat.

  3. Add the chicken breasts and cook until golden brown on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.

  4. In the same skillet, add the diced onion and minced garlic. Saute until onions are translucent and garlic is fragrant.

  5. Pour in the chicken broth and bring to a simmer. Cook for 2 minutes to reduce the broth slightly.

  6. Add the heavy cream and Gorgonzola cheese to the skillet. Stir until the cheese is melted and the sauce is smooth.

  7. Return the chicken breasts to the skillet and coat them with the sauce. Cook for an additional 5-8 minutes, or until the chicken is cooked through.

  8. Serve the chicken Gorgonzola over cooked pasta or with a side of vegetables. Garnish with fresh parsley.
